Valentine's Day 2007



銀白色的情人節,踏著深達數尺的積雪,和一修走到密西根湖畔,第一次見到湖面上積滿了皚皚白雪,就這樣綿延著直達遠方的天際,不似街道上鞋印雜沓污成爛泥般的慘況,湖面上的積雪平整而乾淨,讓人聯想到一望無際的西伯利亞平原,乾淨鬆軟的雪閃著柔和的餘暉,有著靜謐的安寧及祥和,除了凍得快要掉下來的手和腳趾頭,一切都是銀白色的美好。

為了一嘗美味的Godiva Chocolate Cheesecake,今天繼續前往Cheesecake Factory報到,一起歡度情人節,順便也慶祝一修痛苦的期中考終於告一段落,我們兩個餓著肚子,對著menu大肆YY想像一番,點了馬鈴薯濃湯,上次吃到覺得很不錯的中式雞肉沙拉,Shrimp Scampi and Chicken Madeira。

我很喜歡今天的馬鈴薯濃湯,上面灑了一些蔥花,碎培根,還有淋上一些酸奶,蔥花和酸奶跟濃湯搭起來很棒!Shrimp scampi 是將蝦和蒜味奶油加上白酒一起煮,最後淋上少許檸檬汁,撒上荷蘭芹,Chicken Madeira是雞胸肉和蘑菇,用奶油和Madeira Wine調味,上面灑上Mazzarella Cheese,擺上蘆筍放入烤 箱烤3-4分,盤子上還有3球馬鈴薯泥,份量十足,味道也很不錯。

餐後當然不能錯過Godiva Chocolate Cheesecake,雖然已經很飽了,還是吃得很幸福,再把事先偷偷寫好的卡片交給一修,為今日的大餐畫下一個甜蜜的句點

回家後,收到一修準備的卡片,和心型盒子裝的Godiva Chocolate,很驚喜,這是個美好的情人節~

Shrimp Scampi
35 min 30 min prep

1 lb raw shrimp, peeled and deveined
3/4 cup white wine
1/4 cup light olive oil
1/2 cup unsalted butter
2 tablespoons blue bonnet margarine
3 tablespoons minced garlic
1/4 teaspoon paprika
1/2 tablespoon parsley flakes
grated parmesan cheese, to top



1. Heat wine, olive oil, butter, margarine, and garlic in a large skillet on medium heat until it just starts to boil.

2. Then add paprika and parsley flakes, stir in and immediately add shrimp.

3. Cook for about 4 or 5 minutes or until shrimp turns pink.

4. Don't overcook. Spoon shrimp onto plate with some of the cooking sauce and top liberally with parmesan cheese.



Cheesecake Factory Chicken Madeira
40 min 20 min prep

1 tablespoon olive oil
4 boneless skinless chicken breasts
8 asparagus spears
4 slices mozzarella cheese
2 tablespoons olive oil
2 cups fresh mushrooms, sliced (I used baby bella)
3 cups madeira wine
2 cups beef stock
1 tablespoon butter
1/4 cup cornstarch (optional)
1/4 teaspoon ground black pepper



1. Heat 1 Tablespoon olive oil in a large skillet over medium heat. cover each chicken breast with plastic wrap and using a mallet flatten to about 1/4 inch thick. Sprinkle with salt and pepper.

2. Saute chicken for 4 to 6 minutes or until the chicken has browned just a bit. Remove from pan and keep warm. Do not clean pan.

3. Keeping the heat on medium, add two Tablespoons olive oil to the skillet. Add the sliced mushrooms and saute for about two minutes. Add the Madeira wine, beef stock, butter and pepper. Bring the sauce to a boil, then reduce heat and simmer for about 20 minutes or until sauce has thickened. The sauce will be done when it has thickened and turned a dark brown in color. (optional-Make a paste from cornstarch and some of the sauce. Stir into sauce until thickened.).

4. As the sauce is simmering, bring a medium saucepan filled halfway with water to a boil. Add a little salt. Toss the asparagus into the water and boil for 3 to 5 minutes. Drop the asparagus in a bowl of ice water to halt the cooking.

5. Set the oven to broil. Prepare the dish by arranging the cooked chicken fillets on a baking pan. Cross two asparagus spears over each fillet, then cover each with a slice of mozzarella cheese. Broil the fillets for 3 to 4 minutes.

6. To serve, arrange two chicken breast on each plate, then spoon 3 or 4 tablespoons of Madeira sauce over the chicken on each plate.
